Fresh Tomato Basil Soup

For this soup, you’ll need chopped red onions (2 onions makes about 1.5 cups), extra-virgin olive oil (3 tablespoons), minced garlic cloves (5), chopped peeled carrots (2), coarsely chopped tomatoes (5 large), sugar (1.5 teaspoons), fresh basil (1/4 cup), coarse salt (1-1.5 tablespoons), heavy cream (3/4 cup), vegetable stock (3 cups), ground pepper (2 tablespoons), and tomato paste (1 tablespoon)

Heat oil in a large, heavy pot over medium-low heat and put onions and carrots in, heating them until tender for about 10-15 minutes. Throw in the garlic and saute for a minute, then stir in the sugar, tomato paste, salt, pepper, vegetable stock, and tomatoes. Up the heat to medium-high and let it come to a boil before lowering the heat to simmer, until the tomatoes become tender. This process takes about 30-40 minutes, and at that point, you will remove the soup from the heat and stir in cream.

If you have a food mill, run the soup through it and discard the leftover dry pulp. If a food mill is not something you own, put the soup in a blender and food processor. Reheat till hot and garnish with fresh basil.
